Maki Mó is a chef-driven restaurant rooted in Ecuadorian produce and inspired by the flavors of Asian street food. We combine local ingredients with the flavors, techniques, and influences of diverse Asian cultures and cuisines.

We are a pioneering concept in Ecuador, exploring the intersection of these culinary traditions while bringing Ecuadorian produce into a casual fine dining experience: creative and thoughtfully crafted cuisine in a relaxed, warm, and welcoming atmosphere.

OUR CUISINE

Our chef-driven cuisine combines shareable bites, Asian-inspired crudos and ceviches, rice & noodle bowls, ramen, baos, sushi rolls, and nigiri.

Our menu explores the diverse flavors and textures of Asia through Ecuadorian produce, reinterpreting Asian street food through our own culinary identity. You’ll find fresh and light dishes alongside richer, more comforting preparations, all with a creative and contemporary approach.

The experience is complemented by a signature cocktail program that follows the same philosophy as our cuisine, exploring ingredients, flavors, and techniques to create drinks with character.

OUR CHEF

Andrés Robles is an Ecuadorian chef with over 18 years of experience in kitchens across Ecuador and abroad.

Throughout his career, he has led the culinary teams of luxury hotels and cruise ships, Michelin-starred restaurants, and renowned Relais & Châteaux properties, experiences that have shaped his perspective on gastronomy and the value of exceptional ingredients.

His cuisine is driven by curiosity—a desire to explore new techniques, flavors, and ways of understanding gastronomy—bringing together technique, creativity, and a deep appreciation for Ecuadorian produce.

At Maki Mó, he develops a culinary vision that looks to Asia while staying rooted in Ecuador: Ecuadorian produce, technique, and creativity.
